If you’re ready for an easy camping recipe that will knock your socks off, then make this quiche on your next camping trip. You won’t be able to get enough of the gooey cheese and crunchy bacon. So load up your Forest River Cherokee travel trailer from Campbell RV and enjoy a weekend away from the stress at your favorite campground.
4 eggs, 1 pre-made pie crust, 8 slices of crispy bacon, 1 cup milk, 1/2 cup cheddar cheese, 1/2 cup mozarella, 1/3 cup parmesan cheese (grated) — Save an additional 1/4 cup cheddar, 1/4 cup mozarella, and a dash of parmesan for the topping.
Preheat your oven to 400. Bake your empty pie crust for 8 minutes. Beat eggs and whisk in milk. In a separate bowl, combine cheeses, chopped bacon, and salt and pepper to taste. Pour in egg mixture and stir until combined. Remove the pie crust from the oven and fill with the egg and chess mixture. Then bake for 15 minutes.
After 15 minutes, remove the quiche from the oven and reduce the heat to 350. Top the quiche with the remaining cheese and bake until golden brown.
Alternative method: Place your pie crust in an iron skillet and cover with aluminum foil. Heat it over the camp fire for 6-8 minutes, until it’s no longer doughy. Add the egg mixture, cover, and heat over the fire for an additional 10-15 minutes, until the eggs are cooked through. Add your cheese and heat until melted. This method gives a more smokey flavor to your quiche, but requires more attention so you don’t burn the bottom of your pie crust.
