Camping Recipe: Cheesy Foil Packet Potatoes

Recipe adapted from

  • 2 lb. mini Yukon Gold potatoes
  • 2 tbsp. extra-virgin olive oil
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • 2 c. shredded mozzarella
  • 1 c. freshly grated Parmesan
  • Chopped fresh parsley
  • Crushed red pepper flakes


  1. Preheat your grill to medium-high.
  2. Cut and quarter potatoes.
  3. In a large mixing bowl, toss together the potatoes, oregano, garlic powder, and olive oil. Season with salt and pepper.
  4. Divide potatoes between four 10” long pieces of foil and fold the foil crosswise, rolling the top and bottom edges to seal them closed.
  5. Place the foil packets on the grill and cook for 10-15 minutes.
  6. Unwrap foil packets and sprinkle potatoes with mozzarella and parmesan. Fold the foil back over and cook until the cheese is melted, about 3-5 minutes.
  7. Garnish with parsley and red pepper flakes and serve warm.
