Easy Camping Recipes: Popcorn Dogs and Sweet Potato Chips

Popcorn dogs:

2 boxes Jiffy corn muffin mix
2 egg
2/3 cup milk
1 package of hot dogs
1 muffin tin
Aluminum foil

Sweet Potato Chips:

2 sweet potatoes
Salt & pepper to taste
1 tsp smoked paprika
1 tsp brown sugar
Vegetable oil
Iron skillet
Corn dog


Popcorn Dogs:

Quarter you hot dog so that they are in bite-sized pieces and set aside. Combine the dry corn muffin mix with the egg and 1/3 cup milk. Stir until just combined. Portion out the corn muffin mix into your muffin tin, approximately 1/4 cup of mix per cup. Place a slice of hot dog in the center of each muffin so that it is surrounded by the mix.
Cover with aluminum foil. Heat your oven to 400 and bake, covered for 15-20 minutes. Serve with ketchup, mustard, and relish!

Tip: Add toothpicks to the popcorn dogs to make them look even more like mini corn dogs!

Sweet potato chips:

Thinly slice both sweet potatoes. Salt and pepper the sliced potatoes and let sit while your skillet heats up. Cover the bottom of the skillet in oil and wait to add the potatoes until it is piping hot. You can test the oil with a small drop of water, if it cracks or sizzles then it’s ready for the potatoes. Add a thin layer of the chips and cook until golden-brown, flipping them frequently to prevent burning. After cooking, sprinkle with the smoked paprika and brown sugar. Add salt and pepper to taste.
