RV Recipe: Lemon Pepper Salmon and Veggies

  • 2 fillets of salmon
  • 2 zucchini
  • 1 lemon
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder


  1. Pat dry the salmon fillets with a paper towel and then coat with 1/4 tbsp of olive oil each, working it into the fillet evenly.
  2. Sprinkle all over with salt, pepper, and garlic powder to taste.
  3. Wash and dry your produce.
  4. Slice the lemon thinly and layer slices on top of the salmon.
  5. Cut two large squares of foil and set the salmon in the center of each.
  6. Cut the zucchini in half and then into 1″ think moons and surround the salmon with the slices.
  7. Close the foil packets, being sure to seal completely to prevent the steam getting out.
  8. Add to the grill or oven at around 350┬░F for 15 minutes or until the salmon is tender and cooked through.
  9. Serve over rice or on its own.
