Soup season is my favorite time of year, and in warmer climates like Florida you really have to take advantage of cooler weather when you have it! All of my favorite foods are the kind that are served in a bowl and eaten with a spoon (hello, ice cream), and this hearty recipe for beefy noodle soup is no exception. Whether you make it at home or when you’re out camping in your new or used RV, it’s sure to become a family favorite. It’s so simple – try it this week!
Beefy Noodle Soup
Ingredients:
- 3 lb beef chuck roast
- 1 26-oz Cream of Mushroom soup
- 2 32-oz beef broth, divided
- 1 packet Beefy Onion soup mix
- 2 tsp minced garlic
- 1 package egg noodles
Kitchen tools you’ll also need:
- Slow cooker
- Can opener
- Large bowl
- Whisk
Let’s get slow-cooking!
- Place chuck roast in slow cooker.
- In a large bowl, whisk together the cream of mushroom soup, half of the beef broth (one carton only), dry soup mix, and garlic. Pour over the beef roast in the slow cooker.
- Place the lid on the slow cooker, and let it cook for 4 hours on high heat.
- After 4 hours, remove the lid. Shred the meat with a fork. Resist the urge to slurp down the entire pot – it’ll smell so good at this point!
- Add the whole package of egg noodles and remaining carton of broth.
- Reduce heat to low and cook for one hour or until noodles are tender.
- Serve and enjoy!
To make clean up even easier, use a Crock Pot liner in your slow cooker before you get started. Pour off the leftovers (if there are any!) into a food storage dish to save, dispose of the Crock Pot liner, and you’re practically done with clean up!
